Easy Breakfast Prep Idea

For today’s blog I wanted to give you an easy breakfast prep idea and some tips and tricks I’ve used over the years to ensure I have healthy meals available.  When it comes to meal prepping I think it's important to be a little sporadic with it and not so robotic which means a few different things such as variety, timing, and portions.  Variety is important because you don’t want to become bored with it, so try different proteins, different recipes, and don’t be afraid to experiment with different things.  Timing is another thing to think about, it's better to project your weeks only a few days at a time so that means you’ll need to visit the store a couple times a week which also helps with waste. Let’s dive into how to do an easy breakfast prep!





First meal of the day is obviously breakfast which is my favorite type of food and also i think the easiest to mix and match.  One of my favorite meal prep breakfasts is a scramble where you can change up your ingredients such as potatoes, eggs, veggies, cheese, and anything else you think may be good together.  The great thing about cooking is there is no wrong or right answer, have fun with it!  When making your scramble think about the length that each item will take to cook as different veggies and proteins take different times.  Below is a sample recipe of how I would build out my scramble:




Ingredients

4 strips of bacon or protein of your choice

Bag of small red potatoes 

Onion 

Green Pepper

4 Eggs

Cheese 




Directions

-Heat your frying pan or griddle you plan to use to Med-High heat 




-Start chopping your potatoes, onion, pepper to desired size (they make choppers you can use to make them more uniform which i recommend) 




-Crack your 4 eggs in a bowl with splash of water and whisk 




-Once your pan or griddle is warm apply the bacon or protein you are using (if you are a fan of bacon recommend getting a press to help it cook more uniform) 




-Once the bacon is done remove it from the pan, drain the grease to a small amount and add the potatoes as they will take the longest to cook (If you don't want to cook your potatoes in bacon grease empty it and add your choice of oil) 




- Cook the potatoes until they get golden brown, stirring occasionally until done




-Remove the potatoes and add more oil to the surface if needed before adding the onions and peppers then cook until desired doneness stirring occasionally 




- A few mins before the peppers and onions are done turn your heat down to Low-Med




-Remove the onions and peppers from you skillet and reapply oil if needed then add the eggs continuously stirring as they cook




-When they are close to being done add a little cheese and stir then re add the potatoes, onions, peppers, and crumble the bacon back in to the skillet




-Stir all the ingredients together and then divide between a plate and tupperware




-Now you have a delicious breakfast today and as needed in the next couple days, don’t be afraid to mix and match ingredients in your scramble, have fun!
