Hashbrown Omelette on Blackstone Griddle
Today I want to walk you through whats become one of my favorite meals to cook on the blackstone griddle. I was contemplating picking a griddle up for awhile but broke down a few months ago and let me tell you its been a game changer! Not only just for the great meals you can cook but if you food prep it is key to cooking multiple things at once in addition to making big batches of food. I’ve cooked a lot of things recently but this hash brown omelette takes it home probably because it incorporates two of my favorite things, let’s get started!
First of all turn one section of your griddle on medium-high heat and let it warm up, now keep in mind you could essentially imitate this recipe on the stove top with a frying pan as well. Once your griddle is warm we are gonna start by cooking the protein of choice (bacon, sausage, etc.) and once that has finished move it over to the side of the griddle that is turned off. If you have any other ingredients you’d like to add grill them up at this time such as peppers, onions, etc. The good thing is the residual heat from the section that is on will keep your other food warm as you cook. Clean the spot off where you cooked your protein and add back on some of the grease from your meat to the surface. Then add your shredded hash browns to the griddle and spread out evenly into a rectangle shape as pictured below.
Now kick back, relax, and let them puppies cook because if you’re like me you like your hash browns crispy which is only gonna make the dish better. You want the edges around the hash browns to turn golden brown before the next step and halfway through you may take your spatula and run under them to make sure they aren’t sticking. Once the hash browns are looking nice and done take a couple eggs and whisk them up maybe adding a splash of water to help fluff them up. Pour the mix evenly over the hash browns and spread it out to cover every area of the hash brown. Cook for a few more minutes until the egg around the edges starts to harden and then add your ingredients on top and spread evenly as pictured below.
Next just fold the hash browns in half like a taco and cook for a minute on each side just to ensure the egg gets done but the warm ingredients you added should help in that process. Now dig in and enjoy, keep in mind you can explore different ingredient combinations til you find your favorite. If you don’t have a blackstone griddle I highly recommend picking one up as its been a game changer when it comes to meal prepping. The bonus too is I don’t make a mess in the kitchen which keeps my wife happy!
